Whether you choose from our spring or fall boot camps,

it is always a great time to come and learn, hands on, real farm to table skills of harvesting and preserving as well as a wealth of basic techniques and recipes you'll use for years. Mara has taught cooking proffessionally for over 13 years and is well versed in classical techniques of French and Italian cooking. You'll learn knife skills and baking, harvest from the farm's 2 acre garden, gather eggs and make homemade pasta, learn about butchery and cook with locally raised meats and wild seafood, learn sauce and soup making, preserve fall fruit and tomatoes, visit local farms including cheesemakers and wineries. In the fall, take a walk in the woods to gather mushrooms with a local mycologist, visit the Duncan Farmer's Market, visit a bakery which mills their own grain, bake in Mara's wood burning oven, and prepare dinner for special guest producers and chefs from the region. Maximum class size is 8 people, work will be done in rotating teams. After a farm fresh breakfast which we provide, you'll enjoy a hands on class or a visit to a local producer and a lunch. Afternoons will include some free time, and in the early evening we'll regroup to prepare and present unforgettable dinners.

Price is $1995. + tax which includes all accommodations, (based on double occupancy, a single supplement applies if single occupancy is requested) 3 meals per day, recipes, beverages, and some preserves to take home. Mara's Culinary Boot Camp is open to cooks of all levels.

Mara's Field- to-Table Cooking Classes Every Saturday this summer Starting June 26th

Our Saturday Cooking Classes are going out to the garden! Enjoy a real field to table cooking experience at Fairburn Farm. Classes commence on Saturday at 10 AM in the garden at Fairburn where you'll spend time harvesting fresh produce, foraging for wild foods and gathering eggs. Together with Mara, you'll plan the day's menu before heading into the kitchen to cook together and enjoy a mid afternoon snack of fresh pizza from Mara's wood burning brick oven. The day will culminate around the table where you will enjoy the fruits of your labour with a sampling of some great local wine. Aprons and knives are provided, as well as recipes to take home. Please eat a healthy breakfast before coming, bring comfortable footwear and appropriate dress to do a little garden harvesting, rain or shine. $139. + HST per person, payment in advance.
