It was passion for pure, healthy food
raised from animals that thrive on local vegetation
that prompted Darrel and Anthea to pursue farming water
buffalo. The temperate climate of the Cowichan Valley,
the lush grass and vegetation at Fairburn Farm together
with contented buffalo will guarantee superior milk.
We have the only animals tested for
BSE in North America guaranteeing the health of the
Canadian born water buffalo whose diet is grass and
hay grown at Fairburn Farm where no herbicides or pesticides
have been sprayed in the 120 year history of the farm.
In
September of 2006, we started milking our buffalo and
delicious buffalo mozzarella is now being made by Natural
Pastures Cheese in Courtenay, appoximately 3 hours north
of Fairburn Farm. Currently, the cheese is in very short
supply while we await the birth of this year's calves,
which you will certainly encounter if you stay at Fairburn
Farm this summer. Small amounts of cheese may be available
at Les Amis du Fromage in Vancouver, or at Ottavio Italian
Bakery or the Italian Deli on Blanshard in Victoria.
Mara will be serving water buffalo mozzarella at her
classes and events at Fairburn this summer, including
the leisurly 6 course Italian syle lunchs on the verandah
of Fairburn Farm.
